Baked Cheese, Apricot and Date Brulee

  1. Place goat cheese and cream cheese in 12-qt.
  2. bowl of mixer fitted with paddle attachment (use same size bowl for trial recipe).
  3. Beat on low speed 1 min.
  4. or until well blended, stopping occasionally to scrape bottom and side of bowl.
  5. Add apricots, dates, onions and rosemary; mix well.
  6. For each serving: Portion 1 oz.
  7. of the cheese mixture into ramekin; sprinkle with 1 tsp.
  8. of the sugar.
  9. Use a torch to caramelize the sugar.
  10. Refrigerate at least 30 min.
  11. or until sugar is firm to the touch.
  12. Garnish with a sprig of fresh rosemary, if desired.
  13. Serve with the crackers.
