Baked Cheese, Apricot and Date Brulee
- - goat cheese, softened Target 2 For $5.00 thru 02/06
- - PHILADELPHIA Original Cream Cheese, softened
- 2-1/4 cups dried apricots, diced
- 2-1/4 cups pitted dates, diced
- 1/3 cup green onions, minced
- 1-1/2 tsp. fresh rosemary, minced
- 3 cups sugar
- - assorted crackers
- Place goat cheese and cream cheese in 12-qt.
- bowl of mixer fitted with paddle attachment (use same size bowl for trial recipe).
- Beat on low speed 1 min.
- or until well blended, stopping occasionally to scrape bottom and side of bowl.
- Add apricots, dates, onions and rosemary; mix well.
- For each serving: Portion 1 oz.
- of the cheese mixture into ramekin; sprinkle with 1 tsp.
- of the sugar.
- Use a torch to caramelize the sugar.
- Refrigerate at least 30 min.
- or until sugar is firm to the touch.
- Garnish with a sprig of fresh rosemary, if desired.
- Serve with the crackers.
