Springtime Soup

  1. In a large heavy pan saute' scallions in margarine.
  2. Add chicken broth and non-dairy creamer, beating with wire whisk to blend.
  3. Add potatoes, carrots, rice and salt.
  4. Bring to a boil, reduce heat and simmer 15 more minutes, until rice is tender.
  5. Add aspargus and spinach.
  6. Simmer at least 45 minutes longer.
