Canadian Pea Soup Recipe

  1. Place peas in a colander; rinse under running water.
  2. Put peas in a large stockpot; cover with cool water and allow to soak overnight.
  3. (If using split peas, there's no need to presoak.)
  4. Drain.
  5. In a large pot, heat the butter and saute/fry onion till softened, about 2 min.
  6. Add in peas, salt, salt pork, water and savory.
  7. Bring to boil; cover and simmer for about 1 1/2 hrs or possibly unntil salt pork is tender.
  8. Remove pork; chop and turn to soup.
  9. Continue simmering soup till peas are tender, about 30 min longer.
  10. Remove 2 c. peas from soup and process in food processor; stir back into the soup.
  11. Adjust seasoning and serve.
