Chilean Style Rice
- 2 cup jazmine rice
- 1 medium onion, chopped
- 4 clove garlic
- 1 large carrot
- 1 tbsp salt
- 1 large Red bell pepper
- Rinse the rice in cold water in a strainer to get rid of any extra starch to avoid sticky and not fluffy rice
- Chop onion, bell pepper, dice garlic and thinly slice the carrot on an angle.
- Once the garlic has been finely diced I like to cover it in salt and crush it into a paste using the side of my knife( not necessary)
- Bring 1/4 cup veg oil to a simmer on a low heat and add all the vegetables.
- Low and slow so the garlic doesn't burn.
- After the onions go translucent, add in the rice and stir all the ingredients together.
- Then add 4 cups of water, bring to a boil, cover, and reduce heat to low
- After about 15 minutes it should be done.
- Pack the rice into a cup or mug and flip over for presentation.
- I alway use siracha on this rice it compliments it very well.
