Fajitas
- 1 pound Or More Of Your Favorite Protein: Beef, Chicken, Or Pork
- 1 whole Green Bell Pepper, Sliced
- 1 whole Red Bell Pepper, Sliced
- 1 whole Yellow Onion, Sliced
- 1 whole Medium Zucchini, Sliced
- 1 whole Summer Squash, Sliced
- 1/2 cups Mushrooms
- 4 whole Limes, Juiced
- 1/4 cups Olive Oil
- 1 teaspoon Ground Cumin
- 3 cloves Garlic, Minced
- 1/4 cups Fresh Cilantro, Chopped
- 1 pinch Cayenne Pepper
- 2 dashes Tabasco Sauce, Or More To Taste
- 1 teaspoon Salt, Or To Taste
- 1/2 teaspoons Pepper Or To Taste
- 1 package Fajita Sized Tortillas
- For these fajitas, choose a pound or two of your favorite meat skirt steak, chicken, pork, etc.
- For the veggie lovers, zucchini, summer squash, mushrooms, red and green bell peppers and yellow onions are perfect.
- Prepare the marinade add the limes, olive oil, cumin, garlic, cilantro, cayenne pepper, Tabasco, salt and pepper to a medium sized bowl and whisk to combine.
- Separate the meat and veggies into separate baking dishes and cover generously with the marinade.
- Refrigerate for 4-5 hours (or more).
- You can grill, broil or saute the ingredients.
- Its up to you.
- We like to grill the meat, zucchini and squash and saute the onions, peppers and mushrooms on the stove.
- Serve with warm tortillas and lots of toppings: salsa, cheese, guacamole, sour cream, and whatever else floats your boat.
