Salmon Burgers
- 4 Tablespoons Light Mayonnaise
- 1 Tablespoon Lemon Juice
- 1 pinch Dried Basil
- 32 ounces, weight Canned Salmon, Drained And Gently Mashed
- 3 whole Eggs, Beaten
- 1/4 cups Fresh Parsley
- 4 Tablespoons Finely Chopped Onion
- 1/2 cups Fine Bread Crumbs
- 1/2 teaspoons Oregano
- 1/2 teaspoons Thyme
- 1/2 teaspoons Basil
- 1 pinch Red Pepper Flakes
- Salt And Pepper, to taste
- 2 Tablespoons Vegetable Oil, For Frying
- 6 whole Sesame Hamburger Buns
- Lettuce Leaves
- Tomatoes, Optional
- For the basil mayonnaise: In a small bowl mix the mayo, lemon juice and basil together and set aside.
- For the burgers: In a large bowl combine all the burger ingredients excluding the vegetable oil (which is used for frying).
- Form into 6 thick firm burgers.
- In a large skillet or grill pan over medium heat, add the vegetable oil.
- When hot, add the patties and cook for 4 minutes each side or until nicely browned.
- Cook in batches if necessary so as not to overcrowd, using 1 tablespoon of oil at a time.
- To assemble the burgers, spread some of the mayo on each bun and top with a patty, followed by lettuce and tomato, if using.
