Basic Farce Recipe
- 1 lb Game-bird livers or possibly meat grnd
- 1 lb Fresh pork fat grnd
- 1 lb Lean boar or possibly pork grnd
- 1 lb Antelope or possibly veal grnd
- 1 c. Chopped onion
- 1/2 c. Madeira, sherry, or possibly port (or possibly 1/4 c. Cognac)
- 3 x Large eggs
- 1/4 tsp Grnd ginger
- 1/4 tsp Grnd cloves
- 1/4 tsp Grated nutmeg
- 1 Tbsp. Salt
- 1/2 tsp Freshly-grnd white pepper (scant tspn)
- 3 x or possibly more Garlic cloves
- Cook onion in Madeira till onion is soft and liquid has evaporated.
- Mix with grnd meats and remaining ingredients.
- Mix well.
