Seared Scallops With Fiery Orange Fruit Salsa

  1. Place the juice in a saucepan over medium-high heat and reduce to 2/3 cup, about 25 minutes.
  2. Cool and chill slightly.
  3. Sauce will thicken as it cools.
  4. Make salsa by combining fruit, onion, peppers, cilantro, and 1/4 teaspoon salt in a bowl.
  5. Add 2 tablespoons of the sauce to the salsa and combine.
  6. Season scallops with 1/2 tsp.salt and pepper.
  7. Heat olive oil in a non-stick skillet over medium-high heat.
  8. Sear scallops on the first side to golden brown, about 2-3 minutes.
  9. Turn scallops over and sear on the second.
  10. side until tender and cooked through, about 2-3 minutes.
  11. Serve scallops with salsa and sauce.
