Summer Porch Shrimp Pasta Salad
- 12 lb tube-shaped pasta, cooked and cooled according to package directions
- 1 medium cucumber, peeled, seeded and sliced
- 1 cup fresh sugar snap peas (thawed and trimmed) or 1 cup frozen sugar snap peas (thawed and trimmed)
- 1 cup cherry tomatoes, cut in half
- 14 cup sliced green onion
- 1 tablespoon fresh dill weed
- 12 cup prepared ranch salad dressing
- 12 cup mayonnaise
- 1 (4 ounce) can medium shrimp
- In a large bowl, combine pasta, cucumber, snap peas, tomatoes, green onions and dill.
- Add dressing and mayonnaise, tossing until well coated.
- Gently fold in the Shrimp until all ingredients are well coated.
- Serve immediately on a bed of shredded lettuce.
- If desired, chill before serving.
