Southern Style Stuffed Yams(A Southern Style Favorite)
- 4 medium size yams (same size)
- 3 Tbsp. peanut butter, creamy
- 4 Tbsp. milk
- 3/4 tsp. cinnamon
- 1/2 tsp. allspice
- 1/3 c. peanuts, chopped
- 2 Tbsp. bread crumbs
- 1/4 c. melted butter
- Heat
- oven

- Bake yams until tender, approximately 1 hour.
- Cool slightly.
- Slice yams lengthwise.
- Scoop outtulp, leaving a shell of potato pulp to protect the thin skin
- of
- the yams.
- Combine peanut butter, milk, cinnamon and allspice
- with the scooped-out pulp while still warm, and mash thoroughly.
- Fill hollowed-out potato skins with the mixture, mounding
- slightly. Mix
- the
- peanuts
- and
- bread
- crumbs and scatter
- evenly
- over tops
- of
- stuffed yams.
- Drizzle melted butter
- evenly
- over
- all, and
- place under broiler to brown. Serve immediately.
- Yields 4 servings.
