Southern Style Stuffed Yams(A Southern Style Favorite)

  1. Heat

  4. Bake yams until tender, approximately 1 hour.
  5. Cool slightly.
  6. Slice yams lengthwise.
  7. Scoop outtulp, leaving a shell of potato pulp to protect the thin skin
  8. of
  9. the yams.
  10. Combine peanut butter, milk, cinnamon and allspice
  11. with the scooped-out pulp while still warm, and mash thoroughly.
  12. Fill hollowed-out potato skins with the mixture, mounding
  13. slightly. Mix
  14. the
  15. peanuts
  16. and
  17. bread
  18. crumbs and scatter
  19. evenly
  20. over tops
  21. of
  22. stuffed yams.
  23. Drizzle melted butter
  24. evenly
  25. over
  26. all, and
  27. place under broiler to brown. Serve immediately.
  28. Yields 4 servings.
