Baked Manicotti

  1. Preheat oven to 350 degrees (175 C.).
  2. Lightly grease 13 x 9 inch pan, set aside.
  3. Brown beef in skillet and add onion and garlic.
  4. Saute 3 to 4 minutes until onion is tender; drain off excess fat.
  5. Remove from heat and add spinach, cottage cheese, eggs, salt and pepper.
  6. Stir until well mixed.
  7. Fill each shell with 1/4 cup (60 ml) of meat mixture.
  8. Place filled shells in prepared baking pan.
  9. Pour over spaghetti sauce.
  10. Sprinkle 1/2 cup (125 ml) of grated parmesan cheese.
  11. Sprinkle 1 cup (225 ml) (4 ozs.)
  12. shredded mozzarella cheese.
  13. Bake for 30 minutes.
