All-Purpose Spinach Paste
- 1 1/2 bunches Spinach
- 1/2 can Whole canned tomatoes
- 1 Onion
- 2 stalks Celery
- 2 pieces Ginger
- 1 dash Salt
- 1 tsp Vegetable oil
- 1/2 tsp Vegetable bouillon granules
- 1 pinch Sugar
- 200 ml Water (soy milk)
- Mince the onion, celery, and ginger.
- Microwave the onion for 5 minutes.
- After the onion has heated, saute all the vegetables in olive oil.
- Boil the spinach and then roughly chop into pieces.
- Add the water (or soy milk), tomato, spinach, and cooked onion, in that order, to a blender and blend until a paste is formed.
- Use a blender if possible.
- Return everything to a pot and add the salt and sugar.
- Simmer for just a short time and it's all done.
- Serve with brown rice and garnish with some extra cooked onion and celery.
