Thai Peanut Chicken
- 12 cup chicken bouillon or 12 cup chicken broth
- 1 -2 teaspoon fresh or freeze dried ginger (ground ginger works too)
- 1 bunch green onion
- 2 green peppers, chopped
- 1 teaspoon cornstarch
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon red pepper flakes (or less)
- 3 -4 chicken breasts
- olive oil
- brown rice
- peanuts
- Cook and cube chicken (can choose to season the chicken a bit).
- Heat oil in fry pan.
- Add cooked chicken and green peppers.
- Stir fry until green peppers are tender.
- Chop green onions and add to green peppers and chicken.
- Mix ginger, boullion or broth, cornstarch, soy sauce, sugar and red pepper flakes.
- Pour mixture over chicken, peppers, and onions.
- Heat very lightly.
- Serve over brown rice.
- Add peanuts just before serving.
