Fettuccine La Crawfish
- 1 (12 ounce) package fettuccine
- 3 bell peppers, chopped
- 3 onions, chopped
- 6 celery ribs, chopped
- 1 12 cups butter
- 1 (14 ounce) packagefrozen crawfish tails, thawed, and drained
- 2 tablespoons snipped parsley
- 4 garlic cloves, minced
- 1 pint half-and-half cream
- 12 cup flour
- 1 (1 lb) package jalapeno pepper cheese, cubed
- Cook noodles according to directions.
- Drain and set aside.
- Saute bell pepper, onion, and celery in butter.
- Add crawfish tails, and simmer for 8-10 minutes, stirring occasionally.
- Add parsley, garlic, and half-in-half and mix well.
- Gradually stir in flour and mix well.
- Simmer for 30 minutes, stirring occasionally.
- Add cheese and continue to stir until melted, and blended.
- Mix fettuccine with sauce.
- Place into sprayed 6 quart baking dih, and bake at 300 degrees for 15-20 minutes, or until heated throughly.
