Caramelized Applesauce

  1. Peel and core the apples and cut into them into half-inch chunks.
  2. Combine with the remaining ingredients, including pod of vanilla bean, and cook over high heat until the apples are tender and caramelized, 5 to 10 minutes.
  3. Cool; remove vanilla bean pod and use as directed.
