Mayfair Dressing
- 1 button garlic
- 1 rib celery
- 1/2 medium onion
- 1 can flat anchovies
- 3 whole eggs
- 1 tsp. black pepper
- 1 heaping tsp. Accent
- 1/2 tsp. sugar
- 2 Tbsp. mustard
- 1 Tbsp. lemon juice
- 2 c. salad oil
- This must be done in a blender or food processor.
- Peel garlic and cut in half.
- Scrape and slice celery.
- Peel onion and cut into chunks.
- Add these with anchovies, mustard, lemon juice, and everything except eggs and oil into machine and process for 5 seconds.
- Add eggs and blend again for a few seconds.
- Add oil a tablespoon at a time until 1/2 cup has been added.
- Then add a quarter cup at a time, blending well between each addition and for a few seconds after all oil has been added.
- Serve over romaine with fresh croutons.
