Magnificent Minestrone
- 1 cup chickpeas (garbanzo beans)
- 1 cup adzuki beans
- 1 cup red kidney beans
- 1 1/2 quarts water
- 1/2 cup pearl barley
- 2 each celery stalks chopped
- 1 each carrots thinly
- 16 ounces tomatoes chopped
- 12 ounces tomato juice
- 2 tablespoons olive oil
- 1 each onions chopped
- 1/2 cup parsley leaves chopped
- 1/2 cup spinach chopped
- 2 each garlic cloves mashed
- 1 teaspoon oregano
- 1 each bay leaves
- 4 tablespoons red wine
- 2 tablespoons parmesan, parmigiano-reggiano cheese, grated
- 2 tablespoons soy sauce, tamari
- Saute onion, parsley, spinach, garlic and herbs in olive oil until tender.
- Mix all ingredients except wine, soy sauce, and parmesan cheese.
- Simmer covered for 1 hour.
- Stir in wine, soy sauce and Parmesan cheese before serving.
