Classic Coleslaw
- 4 cups thinly sliced green cabbage
- 12 cup coarsely grated carrot
- 12 cup thinly sliced onion
- 1 tablespoon minced fresh red chili pepper
- 1 tablespoon minced garlic
- 2 tablespoons red wine vinegar
- 1 12 tablespoons Dijon mustard
- 1 tablespoon olive oil
- salt and pepper
- In a bowl, combine cabbage, carrot, onion, chile pepper and garlic.
- In a small bowl, whisk together remaining ingredients.
- Toss with vegetables.
- Let stand for an hour.
- Toss again before serving.
