Alfredo Lasagna Rollups

  1. Cook lasagna noodles according to package directions; drain.
  2. Meanwhile press liquid from spinach.
  3. In a medium bowl stir together spinach, ricotta, mozzarella, Parmesan, egg and basil.
  4. Season to taste with pepper.
  5. Preheat oven to 375 degrees.
  6. Spread ricotta mixture on one side of each noodle.
  7. Roll up from narrow end.
  8. Place in a greased 2-quart rectangular baking dish.
  9. Spread Alfredo sauce over rolls.
  10. Bake, covered, for 45 minutes; uncover and bake 5 minutes more or until heated through.
  11. Top with sliced fresh basil leaves and chopped tomato, if desired.
