Cauliflower Steak with Curry Cauliflower Puree

  1. Preheat oven to 400 degrees F.
  2. First, you need to slice out your cauliflower steaks.
  3. To do this, cut two 1-inch thick slices from the center of the cauliflower and set aside.
  4. Cut the remaining cauliflower into small florets and set on a roasting pan.
  5. Drizzle with olive oil and sprinkle curry powder on top.
  6. Roast cauliflower for 25 minutes.
  7. In a saute pan, heat 1 tablespoon olive oil over medium heat.
  8. Cook the cauliflower steak one at a time for 2 to 3 minutes per side.
  9. While steaks are cooking, add roasted cauliflower, heavy whipping cream, salt and pepper to a food processor.
  10. If needed, add more heavy cream to thin puree.
  11. I also added a bit more curry powder for more flavor.
  12. Spread about 1/4 cup cauliflower puree on the bottom of a plate and top with a cauliflower steak.
  13. Season with salt and pepper.
  14. Enjoy!
