Cauliflower Steak with Curry Cauliflower Puree
- 1 head Cauliflower
- 1 Tablespoon Curry Powder
- 1 Tablespoon Olive Oil, Plus More For Roasting Cauliflower
- 3 Tablespoons Heavy Whipping Cream
- Salt And Pepper, to taste
- Preheat oven to 400 degrees F.
- First, you need to slice out your cauliflower steaks.
- To do this, cut two 1-inch thick slices from the center of the cauliflower and set aside.
- Cut the remaining cauliflower into small florets and set on a roasting pan.
- Drizzle with olive oil and sprinkle curry powder on top.
- Roast cauliflower for 25 minutes.
- In a saute pan, heat 1 tablespoon olive oil over medium heat.
- Cook the cauliflower steak one at a time for 2 to 3 minutes per side.
- While steaks are cooking, add roasted cauliflower, heavy whipping cream, salt and pepper to a food processor.
- If needed, add more heavy cream to thin puree.
- I also added a bit more curry powder for more flavor.
- Spread about 1/4 cup cauliflower puree on the bottom of a plate and top with a cauliflower steak.
- Season with salt and pepper.
- Enjoy!
