Great Northern Bean Stew
- 1 lb. bulk pork sausage
- 1 c. coarsely chopped onions
- 1 c. thinly sliced carrots
- 2 c. chopped cabbage
- 1 Tbsp. brown sugar
- 1 (28 oz.) can whole tomatoes, cut up (undrained)
- 1 (15.5 oz.) can Green Giant or Joan of Arc Great Northern beans, drained
- 1/2 tsp. paprika
- 1/2 tsp. dried thyme leaves
- 1/4 to 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. vinegar
- 1/4 tsp. hot red pepper sauce
- 1/3 c. chopped fresh parsley or 1 Tbsp. dried parsley flakes
- In large saucepan or 4-quart Dutch oven, brown sausage and onions; drain.
- Stir in all remaining ingredients; bring to a boil.
- Reduce heat; cover and simmer 15 minutes.
- Makes 6 (1 cup) servings.
