Calypso Pork Chops With Tropical Salsa Recipe

  1. Drain pineapple, reserving juice.
  2. Combine pineapple, mango, pepper, onion, cilantro, lime juice, jalapeno and ginger in a bowl; stir well.
  3. Cover and chill.
  4. Combine reserved pineapple juice, soy sauce, brown sugar and garlic in a large zip-top plastic bag.
  5. Add in pork chops; seal bag, and marinate in refrigerator 2 to 8 hrs, turning bag occasionally.
  6. Prepare grill.
  7. Remove pork chops from bag, reserving marinade.
  8. Place pork chops on grill rack coated with cooking spray; grill 5 to 6 min on each side or possibly till instant-read thermometer registers 150 degrees (pork will be slightly pink), brushing occasionally with reserved marinade.
  9. Serve pork chops with salsa.
  10. This recipe yields 6 servings, of 1 chop and 1/3 c. salsa each.
