Chicken and Tofu Ginger Stir-Fry
- 1 slab Chicken thighs
- 1/2 block Firm tofu
- 1/2 Onion
- 3 tbsp Water
- 1 tbsp each Soy sauce, Mirin
- 1/2 tbsp Oyster sauce
- 1/2 tbsp Grated ginger
- 1 bit less than 1 teaspoon Sugar
- Cut off any excess fat from the chicken thigh and slice diagonally into bite size pieces.
- Cut the tofu into 9 pieces, and slice the onion.
- Mix the marinade ingredients together.
- Stir fry the chicken slices in 2 tablespoons of oil until lightly browned and the oil from the meat has rendered, then remove from the pan.
- Leave the oil in the pan.
- Stir fry the tofu and onion with the residual oil.
- Don't mix around too much, just leave it alone until browned, then flip over to brown the other side.
- When the onion has softened, add the chicken and pour in the sauce mix.
- Mix to distribute the sauce evenly.
- When there's not much extra sauce left in the pan, it's done.
