Chicken and Tofu Ginger Stir-Fry

  1. Cut off any excess fat from the chicken thigh and slice diagonally into bite size pieces.
  2. Cut the tofu into 9 pieces, and slice the onion.
  3. Mix the marinade ingredients together.
  4. Stir fry the chicken slices in 2 tablespoons of oil until lightly browned and the oil from the meat has rendered, then remove from the pan.
  5. Leave the oil in the pan.
  6. Stir fry the tofu and onion with the residual oil.
  7. Don't mix around too much, just leave it alone until browned, then flip over to brown the other side.
  8. When the onion has softened, add the chicken and pour in the sauce mix.
  9. Mix to distribute the sauce evenly.
  10. When there's not much extra sauce left in the pan, it's done.
