Pear and Gorgonzola Salad with Candied Walnuts
- 1/2 cup walnut pieces
- 1/4 cup sugar
- 1 tbsp olive oil
- 6 cup mixed greens, baby lettuce or baby spinach
- 1 pear
- 1/3 cup prepared vinaigrette dressing
- 1/2 cup dried cherries or dried cranberries
- 1/2 cup crumbled gorgonzola (or any crumbly cheese like queso fresco)
- Line a baking sheet with foil, coat with non-stick spray.
- Combine walnuts and sugar and oil in a medium skillet, place over medium high until sugar begins to melt (don't stir yet).
- Reduce heat to low, cook and stir until sugar turns golden brown and walnuts are coated.
- Remove from heat and carefully pour mixture onto foil sheet.
- Let cool and break into pieces.
- Slice pear very thinly, discard seeds and core.
- Pour dressing over pears in a small bowl, set aside or cover and refrigerate.
- Right before serving, toss greens with pear and dressing mixture.
- Top with cherries, cheese and candied walnuts.
