Pear and Gorgonzola Salad with Candied Walnuts

  1. Line a baking sheet with foil, coat with non-stick spray.
  2. Combine walnuts and sugar and oil in a medium skillet, place over medium high until sugar begins to melt (don't stir yet).
  3. Reduce heat to low, cook and stir until sugar turns golden brown and walnuts are coated.
  4. Remove from heat and carefully pour mixture onto foil sheet.
  5. Let cool and break into pieces.
  6. Slice pear very thinly, discard seeds and core.
  7. Pour dressing over pears in a small bowl, set aside or cover and refrigerate.
  8. Right before serving, toss greens with pear and dressing mixture.
  9. Top with cherries, cheese and candied walnuts.
