Curried Pecans
- 1 lb. pecan halves
- 1/4 c. peanut oil
- 1/4 lb. butter
- 2 Tbsp. brown sugar
- 2 Tbsp. curry powder
- 1 Tbsp. ginger
- salt to taste, about 2 tsp.
- 1 Tbsp. chutney
- Preheat oven to 350u0b0.
- Place the pecans on a baking sheet and toast in the oven for about 10 minutes.
- Do not allow the pecans to brown.
- Remove the nuts from the oven but leave the oven turned on.
- Melt the butter and oil in a large skillet.
- Add the brown sugar, salt, curry and ginger.
- Blend well.
- Add the pecans and stir with a wooden spoon until well coated.
- Add the chutney and mix well.
- Place the pecan mixture on paper towels on the baking sheet and place in the oven.
- Turn the heat off.
- Let the pecans dry in the oven about 10 minutes.
- Remove from the oven, salt lightly and let cool completely.
- Store in an airtight container.
