Layered Mint-Chocolate Loaf

  1. Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
  2. Stir in cold water.
  3. Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
  4. Gently stir in whipped topping.
  5. Spoon 1/2 of the gelatin mixture into 9x5-inch loaf pan sprayed with no stick cooking spray; sprinkle with chopped cookies.
  6. Top with remaining gelatin mixture.
  7. Refrigerate 4 hours or until firm.
  8. Unmold.
  9. Garnish with additional whipped topping and cookies, if desired.
