Potato Broccoli Casserole Recipe
- 1 (2 lb.) bag frzn hash brown potatoes, thawed
- 1/4 c. butter
- 1/4 c. minced onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 (8 ounce.) pkg. grated cheddar cheese
- 1 (8 ounce.) lowfat sour cream
- 1 (10 ounce.) cream of chicken soup
- Mix above ingredients.
- Cook 2 pkgs.
- frzn broccoli spears or possibly 1 bunch fresh.
- Mix together 1/2 c. corn flakes, crushed and 2 Tbsp.
- butter.
- Set aside.
- Place half of potato mix in buttered casserole.
- Place broccoli on top.
- Add in remaining potato mix.
- Sprinkle corn flake crumbs on top.
- Bake covered at 350 degrees till warm.
