Caribbean fish - by DW
- 1 large red snapper
- 6 fresh okra (chopped in half)
- to taste salt and pepper
- 1/2 cup fresh basil
- 4 strands of fresh thyme
- 1/2 bunch chopped fresh collard greens
- 1 tablespoon garlic powder
- 1 fresh onion chopped
- 1/4 cup olive oil
- 1/2 cup dry chopped oregano
- Rub the inside of the fish with salt, pepper and garlic powder.
- Drizzle some olive oil on the exterior and rub on dry oragano.
- Put a generous crack of salt and pepper on the outside.
- Set fish aside.
- In a pan, heat 1/4 cup of olive oil, and add the remainder of the ingredients.
- Let them cook to al dente
- Remove mixture from pan and stuff inside fish.
- Put fish inside tray (like the one I have in the photo).
- Grill on bbq.
- Sever on a tray.
- Enjoy with a nice beer; preferably a radler type beer.
