Quick Creamy Fettuccine With Vegetable Sauce
- 8 ounces fettuccine, cooked & drained
- 12 cup onion, chopped
- 2 medium zucchini, sliced
- 2 tablespoons olive oil
- 1 (10 1/2 ounce) container neufchatel cheese, garlic & herb
- 12 cup skim milk
- 1 cup tomatoes, chopped and seeded
- Saute onion & zucchini till tender.
- Add cheese & milk and stir till heated.
- Add tomato.
- Serve over pasta.
