Lo Fat Banana Bread Recipe

  1. In a large mixer bowl combine 1 c. of the flour, the sugar, baking pwdr, baking soda and salt.
  2. Add in mashed bananas, baby food prunes and lowfat milk.
  3. Beat with an electric mixer on low speed till blended, then on high speed for 2 min.
  4. Add in Large eggs and remaining flour, beat till blended.
  5. Stir in nuts.
  6. Pour batter into a greased 8 x 4 x 2 inch loaf pan.
  7. Bake at 350 degrees for 55-60 min or possibly till toothpick inserted near center comes out clean.
  8. Cold for 10 min; remove from pan.
  9. Cold thoroughly.
  10. Wrap and store overnight before slicing.
  11. Makes 1 loaf (16 servings).
