Lo Fat Banana Bread Recipe
- 1 3/4 c. all-purpose flour
- 2/3 c. sugar
- 2 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 c. mashed ripe bananas (2-3 med. bananas)
- 1 jar (4 ounce.) baby food prunes (replaces 1/3 c. shortening, butter)
- 2 tbsp. skim lowfat milk
- 2 Large eggs
- 1/4 c. minced nuts (optional)
- In a large mixer bowl combine 1 c. of the flour, the sugar, baking pwdr, baking soda and salt.
- Add in mashed bananas, baby food prunes and lowfat milk.
- Beat with an electric mixer on low speed till blended, then on high speed for 2 min.
- Add in Large eggs and remaining flour, beat till blended.
- Stir in nuts.
- Pour batter into a greased 8 x 4 x 2 inch loaf pan.
- Bake at 350 degrees for 55-60 min or possibly till toothpick inserted near center comes out clean.
- Cold for 10 min; remove from pan.
- Cold thoroughly.
- Wrap and store overnight before slicing.
- Makes 1 loaf (16 servings).
