Bean Cheese Herb Muffins
- 2 cups black-eyed peas
- 3 large eggs
- 1 teaspoon baking powder
- 12 teaspoon salt
- 1 tablespoon flax seed meal
- 12 teaspoon garlic powder
- 1 teaspoon mixed Italian herbs
- 12 cup cheddar cheese, shredded
- 1 teaspoon red pepper flakes
- 14 teaspoon pepper
- beat on high eggs and beans til mostly smooth
- add in rest except cheese, blend.
- stir in cheese.
- put into 8 muffins cups.
- bake 350 for about 20-25 minutes.
- until knife comes out clean.
