Chip Flake Chicken

  1. Preheat oven to 375F.
  2. Toss the chicken tenders and olive oil in a bowl until evenly coated.
  3. In a large ziploc bag, combine cornflakes and potato chips.
  4. Crunch by hand or with flat end of meat mallet.
  5. The finer the crunch, the better it will stick to the chicken.
  6. Add the onion flakes, pepper, salt, garlic powder and paprika and shake to mix.
  7. Add the chicken.
  8. Seal the bag and shake to completely coat.
  9. Line cookie sheet or baking pan with foil and spray with cooking spray generously.
  10. Dump coated chicken out of bag and onto foil.
  11. It's ok if there is loose coating dumped onto the pan.
  12. Bake at 375F for 20-40 minutes or until chicken is cooked through.
  13. Don't overbake if you want moist chicken!
