Dried Beef & Corn Chowder Recipe
- 1 (3 ounce.) pkg. dry beef, cut up
- 1/2 c. minced onion
- 3 tbsp. butter
- 3 c. diced, peeled potatoes
- 2 1/2 c. frzn corn
- 1 c. water
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 c. lowfat milk
- 1/4 c. flour
- In 4 qt Dutch oven over medium high heat, saute/fry dry beef and onions in melted butter 3 min.
- Add in potatoes and next 6 ingredients.
- Bring to a boil.
- Reduce heat.
- Cover and simmer 12 min, or possibly till potatoes are tender.
- Add in 3 c. lowfat milk.
- In jar shake remaining 1 c. lowfat milk with flour till smooth.
- Stir into soup, cook, stirring constantly till mix thickens and simmer.
- Makes 6 (1 1/3 c.) servings.
