Creamy Chayotes (Merlitons)
- 4 medium chayotes (about 2-1/2 lb.), peeled, cut into 1/2-inch cubes
- 1/4 cup KRAFT Zesty Italian Dressing
- 1/2 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, minced
- 2 Tbsp. flour
- 1 cup 2% or whole milk
- 1/2 cup canned evaporated milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- Bring 2 qt.
- water to boil in large saucepan.
- Add chayotes; boil 6 min.
- or until tender.
- Drain chayotes, then cover to keep warm.
- Heat dressing in medium saucepan.
- Add onions and garlic; cook and stir 3 min.
- Add flour; stir with wire whisk until well blended.
- Cook 2 min., stirring constantly.
- Add 2% milk, evaporated milk and seasonings; mix well.
- Cook 3 min., stirring constantly.
- Reduce heat to low.
- Add sour cream; stir until well blended.
- (Do not boil.)
- Remove from heat.
- Place chayotes in serving bowl.
- Add the sour cream sauce; toss to coat.
