Eldress Prudence's Ambrosia Cake
- 23 cup butter or 23 cup margarine
- 2 cups sugar
- 12 cup milk
- 3 cups flour
- 4 eggs
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1 egg, well beaten
- 12 pint heavy cream, whipped
- 1 cup grated coconut
- 12 cup sugar
- 1 orange, juice and zest of
- 12 cup butter or 12 cup margarine
- 1 cup sugar
- 12 cup light cream
- 1 teaspoon vanilla
- CAKE: Cream butter and sugar together.
- Add the eggs one at a time, beating thoroughly after each egg is added.
- Sift all dry ingredients together and add them alternately with the milk to the sugar-egg mixture.
- Bake at 350 in two greased 8-inch tins for 30 to 35 minutes.
- When cool, fill with the following.
- FILLING: Mix together the above ingredients and spread between the two layers and on the top of the cake.
- VANILLA SAUCE: Melt butter in medium saucepan.
- Remove from heat.
- Add remaining ingredients, mixing well.
- Simmer, stirring over low heat about 5 minutes or until the sugar is dissolved.
- Serve hot over pudding or cake.
