  1. Bring 1 inch of water to a boil in a small saucepan.
  2. Blanch garlic until tender, 3 to 5 minutes; drain and mash garlic into a paste.
  3. Whisk together garlic, egg yolk, mustard, and lemon juice in a bowl.
  4. Slowly whisk in oil until emulsified.
  5. Whisk in paprika, cayenne, hot sauce, and 1 teaspoon salt; season with pepper.
