Tex-Mex Minestrone
- 1/2 lb. (225 g) extra-lean ground beef Safeway 1 lb For $5.99 thru 02/09
- 1-1/2 cups water
- 1 large tomato, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup (1/2 of 19 fl oz/540-mL can) black beans, rinsed
- 1/2 cup 25%-less-sodium beef broth
- 1/4 cup shell macaroni, uncooked
- 2 Tbsp. Kraft Calorie-Wise Zesty Italian Dressing
- 1/2 tsp. ground cumin
- 1/2 cup Cracker Barrel Shredded Light Tex Mex Cheese
- Brown meat in large saucepan; drain.
- Add all remaining ingredients except cheese; mix well.
- Bring to boil; simmer on medium-low heat 8 min.
- or until macaroni is tender.
- Serve topped with cheese.
