Apple-Tequila Jelly

  1. Prepare canning jars according to manufacturer's directions.
  2. Pour cider and tequila into a large, heavy saucepan.
  3. Place 2 tablespoons of the sugar in a small bowl.
  4. Stir in the Sure-Jell Light, mixing well.
  5. Add the Sure-Jell Light mixture and the butter to the cider.
  6. Bring the liquid to a full rolling boil over high heat, stirring constantly.
  7. Quickly stir in the remaining sugar, and bring the mixture back to a full rolling boil again, continuing to stir.
  8. Boil 1 minute.
  9. Remove pan from the heat.
  10. Skim off any foam.
  11. Fill prepared jars to within 1/8 inch of their tops.
  12. Process them in a water bath according to the manufacturer's directions, at least 10 minutes.
  13. The jelly may take several hours to set.
