Banana Honey Muffins
- 1 cup bran cereal
- 2/3 cup Land O Lakes Half & Half or Fat Free Half & Half
- 1/4 cup Land O Lakes Butter, melted
- 1/3 cup firmly packed brown sugar
- 2 tablespoons honey
- 2 medium (1 cup) ripe bananas, mashed
- 2 Land O Lakes Eggs, slightly beaten
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Heat oven to 375F.
- Stir together bran cereal and half & half in bowl.
- Let stand 5 minutes.
- Add butter, brown sugar, honey, bananas and eggs to bran cereal mixture; stir until well mixed.
- Stir in flour, baking powder, baking soda and salt just until moistened.
- Spoon batter evenly into 12 paper-lined or greased muffin cups.
- Bake 20-25 minutes or until lightly browned.
