Yum Woon Sen (Thai Cellophane Noodle Salad)
- 40 grams Cellophane noodles
- 50 grams Ground pork
- 8 counts Peeled shrimp
- 1/2 Cucumber
- 1/5 Carrot
- 1/3 Celery
- 1 Tomato
- 6 pieces Dried wood ear mushrooms
- 1/4 Yellow bell pepper
- 1/4 Red onion
- 1/2 Grated garlic
- 1 pod Chili pepper (sliced)
- 1 tbsp Lemon juice
- 2 tbsp Nam pla
- 1 tsp Sugar
- Julienne or thinly slice the vegetables.
- Rehydrate the wood year mushroom by soaking it in water, then cut into strips.
- In a sauce pan, boil water and add the ingredients in the following order of shrimp, ground pork, wood ear mushroom, noodles.
- If you put the meat in a small colander (like the kind you use to dissolve miso for miso soup) it'll be easier to cook.
- Toss Steps 1, 2, and A together.
- Garnish with cilantro or celery leaves and serve.
