Cheese Grits Casserole
- 3 cups water
- 3/4 cup quick grits
- 2 cups shredded cheddar cheese, divided
- 3/4 cup evaporated milk
- 1/3 cup butter, softened
- 2 lg. eggs, beaten
- 6 to 12 drops hot pepper sauce
- 1/8 tsp. ground black pepper
- Preheat oven to 375F.
- Grease a 2 quart baking dish.
- Bring water to boil in sauce pan.
- Slowly stir in grits and cook 5-6 minutes.
- Add 1-1/2 cups cheese, evaporated milk and butter to the saucepan.
- Stir until the cheese melts.
- Add eggs, hot pepper sauce and pepper, stir well.
- Pour into prepared baking dish and sprinkle with remaining cheese.
- Bake 40 to 50 minutes until puffy.
- Let stand 5 minutes before serving.
