Healthy Vita Pack Muffins Recipe
- 2 c. oat bran
- 1 c. oatmeal
- 3/4 c. wheat germ
- 3 teaspoon baking pwdr
- 1 c. grated carrots or possibly minced nuts, raisins, etc.
- Mix the above together in a bowl.
- 1/2 c. lightly packed brown sugar 1/3 c. black strap molasses 4 Large eggs or possibly I use 4 egg whites (no cholesterol) 1/4 c. sunflower or possibly safflower (or possibly other) oil
- Stir dry ingredients in.
- Fill muffin c. 3/4 full.
- Makes 8 (3 inch) muffins plus 10 (2 1/2 inch) muffins (my 2 pans).
- Bake at 400 degrees for 16 to 17 min.
- Note: "Do not be surprised if a neighbor catches you climbing a chestnut tree out of sheer energy."
