Healthy Vita Pack Muffins Recipe

  1. Mix the above together in a bowl.
  2. 1/2 c. lightly packed brown sugar 1/3 c. black strap molasses 4 Large eggs or possibly I use 4 egg whites (no cholesterol) 1/4 c. sunflower or possibly safflower (or possibly other) oil
  3. Stir dry ingredients in.
  4. Fill muffin c. 3/4 full.
  5. Makes 8 (3 inch) muffins plus 10 (2 1/2 inch) muffins (my 2 pans).
  6. Bake at 400 degrees for 16 to 17 min.
  7. Note: "Do not be surprised if a neighbor catches you climbing a chestnut tree out of sheer energy."
