Plum Jelly Recipe
- 5 lbs. plums, crushed (about 4 1/2 quarts.)
- 1 c. water
- 6 c. sugar
- 1/2 bottle (6 ounce.) pectin
- Heat plums and water to boiling point in Dutch oven; reduce heat.
- Cover and simmer 10 min.
- Strain warm; don't press pulp through strainer.
- Strain juice through 2 thicknesses of cheesecloth.
- Mix 3 c. plum juice and sugar.
- Heat; stir constantly.
- Bring to a full rolling boil.
- Add in pectin; heat to full rolling boil.
- Boil 1 minute.
- Skim off foam; pour into warm sterilized jars.
- Leave 1/2 inch from top and seal.
