Light Lunch Wrap

  1. Beat eggs and milk together until light and fluffy.
  2. Combine flour, baking powder and coconut in a separate bowl.
  3. Mix flour mixture into egg mixture and beat well until combined.
  4. Heat greased pan on stove top.
  5. Laddle batter and cook "pancakes".
  6. Batter makes 4 medium pancakes.
  7. For the filling: combine shredded chicken with piquante peppers.
  8. Spoon some of the filling onto pancake.
  9. Add a little bit of tomato pesto and grated cheese then roll and place onto warm pan whilst filling and rolling remainder of the pancakes.
  10. When done, plate and serve with a dollop of sour cream and a side of salad if you like.
