Thanksgiving Leftover Medallions
- 2 cups leftover mashed potatoes
- 1 -1 12 cup leftover cooked turkey, cubed
- 1 -1 12 cup turkey, dressing
- 34 cup gravy
- 14-12 cup breadcrumbs
- salt and pepper
- butter or oil (for frying)
- Mix mashed potatoes, turkey, dressing, gravy and breadcrumbs together.
- Shape into patties.
- (makes about 5 patties).
- In skillet heat butter or oil on medium heat.
- Place patties in skillet, cook for about 5 minutes on each side.
- Serve topped with gravy.
