Spicy Shrimp & Mashed Hominy

  1. Bring hominy, milk and 1/2 tsp.
  2. of the cayenne pepper to boil in saucepan.
  3. Reduce heat to low; simmer 15 min.
  4. or until hominy is softened.
  5. Set aside; keep warm.
  6. Meanwhile, cook bacon in large nonstick skillet 5 min.
  7. or until browned.
  8. Add celery, onions, and green pepper; cook and stir 3 min.
  9. Stir in tomato sauce and remaining 1/4 tsp.
  10. cayenne pepper; bring to boil.
  11. Reduce heat to low.
  12. Add shrimp; cover.
  13. Simmer 5 min.
  14. or until shrimp turn pink.
  15. Place hominy mixture in blender; cover.
  16. Blend until smooth.
  17. Transfer to serving bowl; stir in cheese.
  18. Serve immediately topped with shrimp mixture.
