Basmati Rice With Galangal Recipe
- 250 gm Basmati rice, (8oz)
- 4 piece galangal, peeled
- 1/2 tsp Salt Grated zest and juice of 1 lime
- 2 tsp Caster sugar
- 2 tsp Rice vinegar
- 2 Tbsp. Minced coriander Salt and freshly grnd black pepper
- Place the rice in a pan, cover the rice with water and bring to the boil.
- Add in 3 pcs of roughly minced galangal and the salt to the rice.
- Cook the rice according to the pack instructions.
- When the rice is cooked, run under warm water and then under cool water to refresh the rice.
- Remove the galangal, place the rice into a clean bowl and add in the remaining ingredients and add in seasoning to taste.
- Grate the remaining pcs of galangal and squeeze the juice over the rice.
- NOTES : A fragrant rice dish, delicious served with spicy Thai dishes.
