Black Bean Relish
- 15 ounces black beans canned, rinsed, drained
- 3/4 cup tomatoes finely chopped
- 1 each serrano chiles seeded, finely chopped
- 1/2 cup sweet red bell peppers chopped
- 1/4 cup red onion finely chopped
- 2 tablespoons white wine vinegar
- 1 tablespoon vegetable oil
- 1/4 teaspoon salt
- Mix all ingredients.
- Cover and refrigerate until chilled, about 1 hour.
- Makes about 2 1/2 cups relish.
