Lori's Drunken Chicken

  1. Rinse chicken.
  2. Pat dry.
  3. Season.
  4. Heat butter in a large skillet.
  5. Add chicken.
  6. Brown all over.
  7. Add whiskey.
  8. Reduce.
  9. Cover.
  10. Simmer 30 minutes.
  11. Remove chicken to a platter.
  12. Keep warm.
  13. To pan add enough water to make 2/3 cup.
  14. Add the mushrooms and leeks.
  15. Simmer 10 minutes.
  16. Whisk in the cream, flour, lemon juice and whiskey.
  17. Simmer until thickened.
  18. Return chicken to re-heat.
