Spicy Bean, Corn and Tomato Burrito
- 1/2 whole Onion, Chopped
- 1 Tablespoon Olive Oil
- 1 can (14 1/2 Oz. Size) Black Beans, Drained And Rinsed
- 1 can (14 1/2 Oz. Size) Corn, Drained
- 1/2 cans (14 1/2 Oz. Size) Diced Tomatoes, Slightly Drained
- 18 teaspoons Cayenne Pepper
- 1 teaspoon Cumin
- 1 teaspoon Smoked Paprika
- 4 whole Large Tortillas
- Optional Burrito Toppings: Sour Cream, Cheese And Lettuce
- First take your chopped onion and cook for about 2-3 minutes over medium heat in a pan with the olive oil.
- Add the rest of the ingredients (minus tortillas and the toppings) into the pan and cook for about 5-10 minutes to reduce liquid from the diced tomatoes.
- Place the filling mixture into your heated tortillas.
- Add ingredients such as sour cream, cheese and lettuce to the wrap as well.
- Serve warm!
